Roast Pig Pictures

The pig arrived in a box at the Butcher, we unpacked at home.

We proceded to prep on the Kitchen Counter, yes my wife was there taking the photos.

Here he is posing ( the pig, not me)- looks alive doesn't he

Had to split his spine to butterfly out

My Daughter helping to lay flat

Apple in the mouth for good luck

Injecting the Mojo Marinade- let it soak for 24 hours

The turning of the Pig in the Caja China roaster

Another hour to crisp the skin and here it is

And after the vultures have attacked- it was SOOOO Good...

Hope you all have enjoyed, this was my first pig and it was done just right. If you have a chance try one and see..

Wow great photos!!

I've always wanted to try that but don't usually have a big enough crowd.

I can't believe your daughter was right in there with you pulling it apart!!

I love the last picture- the pig laying there in the kitchen, and wine glasses on the counter! Classic!

Could not be any easier.

Inject the pig, marinate 24 hours ( had to use the bathtub for a cooler) let come up to room temperature the next day and cook. See website for full details.
