I figured I would share with everyone here as well...some of you know me...some of you don't...some could care lessAnyway for those of you who don't I am the Chef at The Ebbitt Room in Cape May. Cooking is a passion for me...although sometimes I wish I didn't work in 115 degree kitchen for 10-15 hours 6 days a week during the summer...but it is what it is...and everyone has their complaints.
Anyway I grew up working in kitchens, from busting suds through out high school to cooking last year at The James Beard House(super bowl of professional cooking) etc etc...went away to Vermont(great state to go to collegeyou remember a lot

to New England Culinary Institute(NECI)...Anyway basically it's what I know and love doing.
SO why did I tell everyone this? Well I just recently joined the NJ Angler Columnist crew to write for them once a month a recipe for their magazine. I will be basing my recipes from what they are writing about....like if the main story is about Offshore Tuna...I will write a tuna recipe...or if it's Taug etc etc...
I presented the Idea to Bill Donovan as a way to entice their readers into getting more out of their fish. Being more creative than the same old things they do(not that there is anything wrong with it...just sometimes people want a "new" way to prepare their catch) I'm also making sure everything in the recipe is challenging enough to want to learn...yet simple enough to not be an all day event trying to figure it out. All of the ingredients you will be able to pick up at the local supermarket or my favorite the roadside farmers markets as the season progresses.
I just wanted to put it out there...I'm super excited and hope the readers of the magazine enjoy reading it and testing the recipe's as much as I enjoy writing them.
So for Bill...I'm sure he probably has hired an extra Editor since my grammar and spelling is sub-par...but I'm excited for the oppurtunity to write for his mag.
