    There are a couple of pretty good King recipes.

    First off, DO NOT Steak the fish - Fillet them. That lets you get all of the red off of the meat and improves the flavor greatly.

    Fried King nuggets:
    Cut the fillets into chunks.
    Dip the chunks in buttermilk
    dredge the chunks in breader mix ( or 1/2 Flour, 1/2 Cornmeal, salt, pepper other seasonings to taste)
    Fry in 375 degree oil until the chunks float...

    Grilled -
    cut the fillets into large chunks
    marinate the chunks in ranch dressing
    skewer the chunks
    salt & pepper to taste
    grill

    I ususally steak mine and put the steaks in a dish and let them marinate for about 6 hours in itialian dressing with natures own seasoning. Take a vidiala onion or any sweet onion and slice it up and put in a pieco of tinfoil with some margerine then fold it up(make it look like a portugese man of war) When you start your fire put tinfoil on grill to let onions cook while you are grilling fish. When you flip fish over take a fork and poke holes in tinfoil and let onion flavored margarine drip on the fish. Oh just season fish to taste before you grill.

    I cut my kingfish into 6" chunks. Place each chunk in a crab trap and soak the traps for a couple days. Pull the traps and eat the crabs.

    This is a great idea too! my mouth is watering for the carmelized Vidalia alone!
