I've been using the chicken rigs just like you except I've been using circles instead of J hooks. Why do you prefer the J- hooks for this rig?
I use the chicken rig when fish are aggressive. Generally offshore (red & scamp groupers, beeliners, bass, triggers etc). When fishing the chicken rig, I set the hook on the bite. That results in a lot of "face" hooked fish that would otherwise (circle hook) never be hooked.
If I was fishing exclusively for grouper (like for example snowy fishing in very deep water, or gag fishing shallow water) I would definitely use circle hooks and not set the hook.
Another reason I like to occasionally fish J hooks is so that I can have the pleasure of setting the hook & coming tight.

Nice set up. Have you ever fished the pacific coast of Mexico? I'm heading there in a few weeks and am gearing up. Wondering which of these rigs you think would work best.

Never fished Mexico, but did fish Guatemala's pacific coast. Based on what I saw and frequently read about bottom fishing in the pacific, the fish there are wild! Heavy chicken rigs would be my first choice.
