    Talking Frozen Mahi

    Just wanted to tell everyone I love this site. Thought I would share a few tips on freezing fish. I rarely freeze fish since I live at the coast, but when I do, I cook the catch then vacuum pack and freeze. My birthday was on the 6th and my family took the blackened Mahi that was caught in May of 09. It tasted as if it was just cooked. Fresh fish when frozen, creates ice crystals which punctures and softens meat.
