Im not a charter captain ... just an angler but I have fished all over the world and on some of the better boats . My suggestion is simple ...
Less emphasis on drinking especially hard liquor and more on the fishing. Hard liquor such as vodka, whiskey etc is a bad idea IMHO with the average customers especially when sun is involved and an the ocean.
1. Food - Variety of sandwitch is good from turkey, ham, and a local style is good. Keep them dry in bags so they dont get soggy in the ice cooler and pre pack them so each customer has there own bag which will have sandwhich, snack, fruit.
2. Tuna - I would stay away from tuna as some people just dont like fish
3. Drinks - should be lots of water & gatorade/propel, maybe pepsi but more focused on water based products
4. Beer - if you offer it, local beers are a good starting point, people enjoy trying the flavor of country they visit.
5. Hard Liquor - NO, NO, and NO bad idea for your business
