Here's a couple to checkout. These are MEXICAN, not really TexMex (I personally can stand TexMex and leave for those in Dallas or for Oklahomians on vacation 
)
Now, you WILL find me in MEXICAN restaurants (which the food is entirely different by the way)
If I were in Galveston, I would stop by these places for BREAKFAST, LUNCH or DINNER (YES, breakfast!, it will be the best you have had in a long time)
