Joe what you are talking about is crab fat it is great eating but your health inspector won't want you eating to much (high colesterol) I liken it to eatin the big gob of fat in the middle of a Delmonico steak YUUUUMMMMY
As for that clamming you get up with me sometime next week I will give you an intro to clamming if you like, I slip out and get a batch of steamers (1.5" to 2") from time to time and I can show you the easy way to biggun's (3"+)anytime.
