    Cooking tuna ?

    Cooked up some long fin this week and god i love this meat!

    Any one have any kick ass reciepes for tuna. I have a freezer full of meat and i wanna try some new ways of cooking this year.

    Most common way i cook it is with salt peper and butter and drop it on the grill . Some wasabe (spelling mistake i think ) for dipping and im set !

    marinate it in italian dressing or an oil herb and garlic marinade then grill it. Also I found some dry spice Jamacan Jerk spices.(made by Island spice co) I got it in jamaca but I think I've seen it here. The 1 from Jamaca probably has some good shit mixed in it. Walkerswood also makes 1 that is available here, but it is red hot.

    That sounds good only problem i have is i did not get you steel stomach at birth so i can not eat all that spicy stuff. But sounds excellent!

    Marinate and throw on the grill is the only way I know how to cook! Favorite is just plain worchestshire sauce. Picked up a jar of " Spicy Hunan Smokehut Hibachi Grill" sauce that was pretty tasty.

    Tuna -My Way

    Tuna -

    Marinate in Olive oil, heavy Salt/Pepper/ Cajun Spice mix and Cummin Powder--This mix should be a semi-thick paste. Let sit in this paste for 1/2 hour till ready.

    In very hot olive oil, sear on all sides. Let stand off to the side and way from heat after cooking and prior to slicing opposite or at an angle to the fat grains that run in the fish.

    In the pan that you seared this lovely tuna, add a cup of white wine (beer is ok, but add lemmon juice) and let it cook down a bit. The oil and the seasoning from the tuna wil make a nice little dressing.

    You can grill this also. but will have to make a side dressing.

    Serve room temp. on top of salad or mix in with some penne pasta. Add your pan sauce dressing.

    This goes for $18 bucks in my restaurant in NYC.

    Marinate with "Zesty" Italian salad dressing. Use your vacuum sealer to marinate, it gets it deep in the meat. Grill, brush with dressing while grilling.

    Admiral's Tuna

    She takes those beautiful loins and cuts some man thick steaks.

    One Way
    She rubs them with olive oil a little salt & peppersome lemon juice, garlic and sears it on a screamin hot grill just enough to color the outisde the center should remain raw.

    Second Option
    Marinate the steaks in a soy, Wasabi, lemon, salt & pepper and herbs de provance and then grill it and serve with sticky rice

    Third Way
    Previously mentioned - we were in Kaiwai and they had some huge YFT steaks and they simply marinated them for 30 minutes in Worcestershire sauce nothing else let em drain and chilled em then they grilled em. Again an awesome meal

    Fouth Way
    Bring them to your favorite resturantafter you have called ahead and ask the chef if he or she can chef you up a signature dish..be certain to bring plenty for tipping with

    None of these should upset a delicate stomach..none are hot as the Admiral has a delicate stomach also

    Soy, Fresh lime juice, Fresh Ginger/ marinate for 30 minutes and sear over white hot charcoal fire for a couple minutes or so on each side.

    I am getting hungry.
