i normally buy mine the day before but i just consulted my brother who is a chef and he said that if they are very very fresh from like day boat you, you can keep them sandwiched between two layers of ice with a drain on the bottom so there is none of their natural juices and they will last about 10 days.. the actually shelf life is 10 days but that is for very very fresh.. if you get it from a market which has had them on ice for a few days i would say keep it to a maximum of 5 days..
if you want the best oysters around alex call some guys about getting cape may salts!! they are one of the best oysters ever cultivated in my opinion..
i have spent numerous nights at docks oyster house in atlantic city sampling some of the most suculant oysters available to man from around the world and the crisp, slightly salty,small size and taste of these babys is unreal!!
get a 100 and you will not be disappointed i promise! if you need help locating them let me know!
Being cautious i would say a day max, maybe two. Get some fresh seaweed and a bucket of seawater. I wouldn't do ice, i would put them in the fridge and drape some seawater soaked seaweed over them.
DO NOT clean them until you are about ready to cook.
Not long in my neck of the woodsWhen you do ice them don't forget to pull the plug so as to keep the freshwater out of them. The saltier the better
I would say they could last up to a week week and a half.

Actually iced properly and constanly they will keep a long time.along time here being a couple days in fall/winter weather.What you don't want to do is let them freeze. You live near the water Hubris hang them off the dock in a topped milk crate or onion type bag. just don't let anyone konw what dock!![]()
does hanging in the water keep them alive for a long time?! i have clam stakes outside of my lagoons in new jersey where they used to bring down the clams from up in the raritan bay and the new york area to clean themselves out and would leave them tied up for a while..
i would wonder how well this would work or would this somehow screw with the flavor due to them being in a different environment!? i like the idea man!!
You said it right, hand em off the dock. Its what we do with chesapeake oysters anyway (float them 2 tides on seaside, so much saltier!) 5 days or so is about my max when kept cold.
