My uncle in North Dakota. Seared rare. Best eating on the planet (other than fresh tuna). Unfortuatly he does not sell to the public.

Don`t know where to get them but i have had buffalo burgers before and they taste great. Less fat than regular beef too

Try the link here it is a Buffalo Ranch in NW PA 20 miles south of Erie about 120 north of Pittsburgh. I used to buy there all the time when I lived in Erie, Excellant quality. I know they ship but I havent done it. They are real good people so I would expect great service.

Buffalo is excellent, but not my favorite wild game.

If you feel adventurous, try Nilgai (south texas antelope).

Very Lean, Great flavor (light beef taste without tasting overly beefy)

Not affiliated with them, but since I shot 2 nilgai last year and filled my freezer, I haven't had the need (or want) to buy any beef.

There's a place just north of Baltimore that raises them and sells them retail and wholesale. I've never bought direct but most of the restuarants in the area sell their meat. I've had it and it's good.
