Just saw the 60 mins bft special. Why do the Japs have to hog all of the med fish and blast freeze them. To me that is no longer "fresh fish". Kill them and put them on a plane and that is fresh.

I don't know about Fish labeling reg but I know with USDA regs. in order for it to be labeled as fresh it cannot be colder than 26 degrees. Blast freezing definately is not Fresh.
When do the pump it full of gas , before or after they blast it ??

When you freeze stuff it loses moister. The faster it freezes the less it loses. When thawed the blast frozen product (bluefin) will be closer to fresh than actually fresh would be. It's a long plane ride from the East Coast of the US to the Japanese market. Blast freezing also will help to protect the meat from damage in route.
Blast Freezing has nothing to do with parasites as most parasites will often revive themselves after the host is thawed. Paramedics have a saying: "You aren't dead until your warm and dead" and it couldn't be more true when it comes to food. Freezing only delays the growth.
the fish being shipped from the east coast are not frozen. they are packed in ice and shipped in crates. the blast frozen fish are a product of the purse seining and farms found in the Med and off New Zealand as the fish have to be transferred to a mother "reefer/freezer" ship and transported back to port before they can be shipped. The only reason they are frozen is on account of time restraints shipping.
