    Yellow Tail Snapper--

    Breaded and fried...back to the basics....mayo and hot sauce...

    You could use either, but I like real mayo with crystal...siracha is the heat though..also, check out kimchi paste and dark sesame oil to mix in with wahoo for spicy wahoo rolls..

    The real key to GOOD Yellowtail is to treat it correctly as soon as it comes out of the water. It should be placed in a ice brine as soon as the hook is removed or cut off. When you get back to the dock and fillet them, DO NOT wash the fillet's off with water. You might wash them in COLD water just before you bread them, but pat them dry with paper towels before breading. Personally I like Panko for breading. Flour, egg wash and then Panko. Can't beat them with slaw & corn on the cob and chow down.
