Looking good. What kind of bacon you use? we would use an applewood bacon on our crab balls, had a mild but fruity smoke to it
The bacon was just off the shelf, It was a bit too strong which over powered the scallop flavor; still really good, but next time I do this I will use a lighter pork like Prosciutto or Pancetta; thinner and not so salty.
You need to put this on your "to do" list Jer...scallops are awesome!
I visited a scallop farm (Coquille St Jacques) on the coast of Rio de Janeiro when I was 15. Both the labs ("nursery") and the actual farm on the sea were very cool, but we did not eat any I'm going to try when I have an opportunity
