    What to do with the Ham Bone?

    I like this recipe to be made as a side dish, But it can just as easily be done as a soup.

    This is a recipe I created it has a bit of island influence to it.
    At some holiday during the year a ham comes into play. It's a shame to throw away the bone. Especially in these times where money becomes tight, this will stretch you dollars and make a hearty side dish or soup especially nice on a cold winter night.

    All of the ingredients are easily found in any supermarket and most can be found in any home already

    1) Hambone
    2) 1lb of pinto beans ( can substitute white beans, black beans etc.)
    3) 1/2 large cabbage or 1 whole small head
    4) 1 large leek
    5) 3 large onions
    6) 1 cup celery
    7) 2 cups of carrots
    8) 3 tbsp of fresh chopped garlic please do not use that jared pre chopped crap
    9) 2 tbsp thyme
    10) 1/2 tsp cayenne
    11) 1/2 tsp whte pepper
    12) 2 tbsps olive oil
    13) 2 limes
    14) 1/2 gallon of low sodium chicken stock
    15) 1/2 gallon of water

    Soak Beans in cold water pick out stones
    Heat olive oil in a large stock pot, sear ham bone on all sides. Remove bone
    Add Leeks, onions, celery and carrots cook until onions are slightly translucent
    Add Garlic
    Add Ham bone back in
    Add Beans
    Add Stock and water
    Squeeze limes and throw them in pot
    add thyme
    add cayenne and whte pepper

    Simmer for an hour and a half
    Remove lime halfs
    Add Cabbage

    Simmer until beans are done about another hour and a half
    Remove the hame bone allow to cool and dice all the remaining ham from the bone and add back to the pot.
    Adjust seasoning I add a little salt at this time and you can add more cayenne my house is not into spicy so I leave it at what it is up top. To Make it as a soup just add another quart of chicken stock to the recipe.

    I add a dollop of sour cream and can eat it as a meal or a side dish.

    Dr's say I need more fiber from Beans and leafy greens and this dish helps do the trick.

    Very simple and flavorful dish Probably cost you les than 10.00 to make as the Ham bone is left over from another meal

    Timmy, Your Funny........I had a beautiful Ham bone with alot of meat on it today. I put it outside for the fox that visits my yard. I thought of making soup, and it would be great but sometimes I need the bone to just DIE! After christmas I have so much left over its enough. Believe me, I argued with myself, if thats possible.........Looks good,



    Tomorrow, Im cooking chicken in my smoker, Brine in apple juice, brown sugar, kosher salt........4 hrs, 225. apple wood.......just a little wood, I dont really like a heavy bark. Woof!

    LOL, damn don't ever throw out the bone. Freeze it never throw it out.

    Alex this makes a great side dish cook most of the liquid out. I was gonna add some cumin and give it an even more of an island feel but I had none in the spice cabinet. The lime gave it a nice flavor. Cabbage and the beans give you a great boost of fiber.

    Call me on sunday if your down and stop by and I'll give ya a container.


    Stuff that chicken with some aromatics lime, thyme sprigs or rosemary

    Oh man...

    That looks good. One of the best new features of the site update is the ability to caption photos like you did. Nice job....those peasant style dishes making food costs stretch are always the best tasting...I could see that dish being made in croc-pot in the AM and ready once the boat is washed down.

    Peasant food has always been of great interest to me. I am trained in classical french cuisine, But I love cultures and to learn how they cook. Cuban/island, Mexican/south American, and the Asian coastal ranges/islands are always intriguing
    The ability to take a lesser cut of meat and make a good hearty meal from it is what cooking is all about.
