Not a terribly creative recipe, but I love to butterfly my duckbreast & pound it fairly flat, then marinate it in a little rum & brown sugar.
Then I take smoked gouda and (insert favorite tropical fruit here), roll/stuff it in the breast & grill it.
Or, do pound flat, cut in wide strips & marinate. Take a small piece of chicken liver, water chesnut, and roll it up, wrap it in bacon pin w/ toothpick & grill.
