    Wahoo Recipes

    After some Wahoo Recipes... one for a southern style Batter/Crumb for frying and one marinade for BBQ / Grillin.
    Now i'm not after any family secrets here as i know you would have to shoot me after you told me
    just some guide lines or well known recipes.....

    Fo' grillin'

    a little fresh crushed garlic
    two littles fresh grated ginger
    one spash lime juice
    2 splashes tamari soy
    3 splashes olive oil
    a bit of dry crushed red pepper

    Marinate fresh wahoo steaks or medallions for 15 - 60 minutes. Grill on HOT COAL until there are three egual heighth layers on the side of the meat. White on top, milky center, white on bottom. Rest for a few minutes. EAT!
    Works great with fresh tuna as well, but I cook the tuna a little less. Middle (pink) layer twice as tall as the white ones. Tuna good hot or cold like this.

    Mango salsa Wahoo

    Get 4 Mangos
    2 kiwi's
    1 banana
    1 large Red Onion
    1 yellow bell pepper
    some fresh sweet Basil

    Peel and dice fruit,peppers and onion into small peices. Put the peeled mixture in a frying pan with butter and cook untill soft. While this is cooking get Wahoo steaks and put olive oil on one dise. Place oiled side on a hot grill, cook until this side is nice and brown. Do not flip the fish on the other side,take it off placing the grilled side down in a glass oven safe dish. Then spoon on the the salsa fron the pan over the uncooked steak top it with the chopped Basil and place in a 350 degree over for 15 to 20 minutes. Trust me its out of this world . Serve with long grain rice and a salad and the wife won't believe her eyes. This is what it looks like

    Keep em comming .......... still to see a Crumb mix for Fryin
    Got some friends from Biloxi that made some kinda coating with "Cornmeal" and other spices never got that recipe

    I have a friend who cooks striper in Pretzel crumbs instead of bread crumbs. Its delicious. I would think it would work with Wahoo just fine

    The next bite on a jig.
    My standard day in day out recipe for wahoo is to coat the wahoo in your favorite dry rub spice, old bay, greek or whatever,

    Then coat the steaks in Mayo.

    Grill on an open grill, Remove, scrape off any left over mayo and serve.

    This is an old Chesapeak Bay way of cooking Blues, but works great on kings and wahoo also.

    Its quick and easy.

    Jim, I liked the way that Marty made it that Saturday night of the charity drive. That was the first time that I had wahoo, It was Great!
