Start with your wahoo in butterflied steak form (no-bones or blood lines!).
Make sure you de-slime the hoo before cutting it...that slime gets kinda nasty, like a king.
Marinate the butterflied steaks in Zesty italian dressing or whatever you like.
You can cook this in the oven, but better if you cook it three quarters of the way on the grill and then take 'em off and put em on a foil lined cookie sheet.
Coat the steaks with Parmesan cheese, don't skimp, and broil till golden brown.
If you do the oven thing...bake on one side for 5 min (depending on thickness) and then 5 min on the other side and then do the broil routine.
Make sure grandmom ain't around.
