Tuna sausage patties
I find it difficult when utilizing the bottom loin of q tuna the one with the belly flap as I never toss the belly flap no matter the size. Also I will take trimmings and US them in this manner. I've never ground runway with a grinder so I'm not real sure how it would work. I do know that to dice it fine make sure it is really cold or u will mash it
Recipe.
I use this recipe for ground turkey also
All the spices are to taste as there is no real measurements
And you may need to adjust depending on how moist or dry the tuna is.
Granulated garlic
Dried basil
Cayanee pepper
Salt and pepper
Grated parmessan cheese
2 eggs
Olive oil
Bread crumbs
I also stuck them in the freezer a bit before going ing the pan
Serve over your favorite pasta and sauce.
I used vodka sauce and it matched up well.
