    Just had a fine plate of fresh blue fin tuna belly meat..AKA toro.
    Yall this is the best sushi I have EVER eaten!! It is like butter and melts in your mouth...sweet..hmmm.... raw, no rice, with just a little dip in the soy to bring out the flavor.....
    We got the fish yesterday (read the jigging forum for the report). When we cleaned it..fat and fish oil just ran out of it. The meat near the belly areas hold the most fat. It is light pink and full of marbled meat. I've got about 10 lbs of this sweetness vac. sealed and froze.

    When we catch a nice wahoo toss it into the kill box and once it is chilled I like to get a sharp knife and start slicing. We keep a "shashimi kit" on the boat with soy sauce, chop stix, and wasabi powder... mmmmm makes a great snack.

    I'm with ya!! I enjoy the fish...no rice...nothing fancy, but my guest want the "training wheels" type of sushi.

    People freak out when I eat while I clean my catch.....by the way...don't get jealous, but my girl and I are having toro tomorrow night ..

    I love goin to a shushi bar, eatin my fill and for desert,
    Smoked eel with a terriyaki glaze. It's like eatin candy.
    Thick, Rich, Awesome.
    Anybody got the recipe ?
    I can get eels in my canal, got a smoker, just need the terryake glaze part.

    Not answering my own question but I found this on the internet.Ingredients:

    2/3 cup maple-flavored syrup OR 2/3 cup honey
    2 tablespoons soy sauce
    2 tablespoons sherry
    1/2 teaspoon dry mustard
    1/4 teaspoon garlic powder
    1/4 teaspoon ginger powder
    wouldn't it need something else to make it terryaki ?
    I reslly want to smoke some eels and come up with the right glaze.
    Help me out here.

    Here it is...the eel glaze...

    1 part soy sauce with 1 part honey/or sugar ..I like to use 1 cup of soy to 1/2 cup sugar and 1/2 cup honey......simmer till the sugar is dissolved.


    You buy the eel at an ASIAN Food Market. It is precooked and deboned...but no sauce.

    I keep a bottle of soy and a jar of wasabi powder in my tackle box when we go fishing. nothing better than fresh fish on the boat
