stuffed wahoo

took some wahoo steaks, cut them in half almost all the way thru so there was a pocket, made some crab imperial, ( any recipe will do) stuffed the imperial into the pocket, baked it will butter , key lime juice , and old bay. topped in with a light hollandaise sauce. OUT OF THIS WORLD.

UM UM GOOD. I've never tried it with a steak, I've always butterflied a fillet to stuff, but this would be pretty on a plate for sure.
What's you crab Imperial recipe--- I personally like it on the sweet side, none of that green pepper or pimintoe mess to foul the sweet crab taste.

im with ya man, for the crab imperial i use a sweet sherry, lightly roasted red peppers instead of green, and if i wanted pimintoes, id have a martini. LOL
