STRIPER W/MANGO SALSA...OH YEA
HONESTLY OH HELL YEA...
SEASON FILLET LIGHTLY WITH SALT & PEPPER THEN JUST BROIL. DONT OVER SEASON THE FISH AS THE SEASONING WILL COMPETE WITH THE SALSA.
SALSA, I USED RED PEPERS, AND YELLOW PEPPERS CUT INTO THIN STRIPS, ABOUT 8-10 PLUMB TOMATOES,AN ONION THE SIZE OF A BASEBALL, 5-6 CLOVES GARLIC. PLAIN PARSLEY, NOT THAT CURLEY CRAP, THE FLAT LEAF, AND FRESH CELANTRO. GET THAT MIXIN, THEN ADD JUICE FROM 2 LIMES, SALT AND PEPPER TO TASTE, THEN CUT A WHOLE MANGO INTO CUBES, LET THAT BABY REST AWHILE THEN HERES MY TWIST, ADD 1 CAN KERNEL CORN AND 12 OZ OF MANDERIN ORANGES. MIX THAT BABY UP AND LET IT CHILL, WHEN READY TO EAT DRESS THE SALSA WITH SOME OLIVE OIL, AND PUT A BIG OLE SCOOPE RIGHT ON TOP AND GET READY, HOT FISH ICE COLD SALSA NOW YOUR EATIN. TRY THIS REALLY DONT TAKE ANY TIME TO PREP. THE LEFT OVER SALSA AINT TO BAD ON TORTILLA CHIPS EITHER.
