I often rant & rave about ginger & scallion steamed fish. Whole black sea bass in particular.

I steam them in the oven at 400 degrees. I use soy sauce & olive oil to "wet" the fish, lay it in a bed of scallion and ginger, add more scallion & ginger on top and wrap it tight in heavy aluminum foil. The fish steams in it's own juices. A good squeeze of lemon when done.

Yup - Thanks Biscuit. Definitely. I was thinking in a whole different way of steaming, your way is a much better way. Thank you. Can't wait to try it. I love ginger, love sea bass and love olive oil...cant see how it wont taste great.
