SPORTFISHINGUSAs DRUNKEN MUSSELLS!!
Two-Three pounds of fresh mussells.. i prefer PIE but any kind will do..
4 cloves of garlid (diced/minced) use a food pro if available. olive oil onions bacon Dark beer (i use modelo negro) In a large sauce pan/pot add a small amount of olive oil and heat until hot.. add the bacon, onions and garlic. allow it to simmer until the onions and garlic become tranlusive... At this point add the mussells and allow to simmer for 5 minutes covered.. After 5 minutes 1-2 bottles of modelo negro and cover.. Allow this to steam for a good amount of time.. i usually wait 10 minutes before opening lid to check. Once they are opening i give them another small shot of beer and allow them to simmer for about 5 more minutes until they are not just opened and are fully cooked! Add a little bit of salt and pepper To Taste if you are so inclined.. Remove them from heat and remove mussels with spoon or anything else you have reserving the juices in the bottom of the pot. remove some of the extra liquid beer leaving about a 1/2 inch.. add some more cooked bacon and some more garlic.. alow this to simmer and reduce by 1/2.. Then take off the heat and pour it on top of mussells!! Sit down with the rest of the case of beer and eat these mussels until you burst! ENJOY!! They are excellent! Maybe box will make a video of it! lol |
