Thread: Seabass in cilantro sauce

    Seabass in cilantro sauce

    heat oven to 350
    grease 13x9x2 baking dish with spray
    enough seabass fillets to cover the bottom.....
    1-cup of chopped cilantro
    1/2-cup whipping cream
    1T of grated fresh ginger
    1 seeded and chopped jalapeno
    1/2-cup plain yogurt
    1 zested lime

    Puree cilantro, cream, ginger and chili in food processor or blender, pour into mixing bowl and add yogurt and lime zest and season to taste
    Salt and pepper the fillets, lay them in the dish and pour sauce over to cover.
    Bake for about 25 minutes or until fish starts to flake easily...
    Let her cool down a little, crack a cold one and dig in....

    Need to hire you as a Chef...you come up with some good stuff.

    Do you have a good "recipe" for making real salsa like you get in Mexico? You know, tomato, onion, pepper, cilantro...all diced up? My wife took a stab at it but it was not right...let me know!

    Glenn, I find most of these online from the travel channel website to epicurious.com ......and tweak em to highlight the stuff I really like....can't take credit for much other than trying them out....

    I had a salsa recipe that was from a guy that married an old girl friends best friend.....he had family back in Mexico....called it sweat of the brow salsa or something.....
    Think it was tomatoes, garlic, roasted jalepenos....nothing else....stayed with them a week out in Denver one year, ate it every day.....sh_t my brains out every morning.....good stuff....especially combined with the beans every night....key was roasting the peppers in a pan getting them nice and blackened before tossing them in a food processor to lightly chop everything up.
    I started using the Rotel canned tomatoes as a base for a lot of stuff a couple years ago, they have great flavor to build on ......the blue label ones kick ass.....

    We need the wind to stop blowing for wreck fishing....that averages out to be around once a month these days....give me a shout towards the end of next week.

    I'm trying this on some tile fish tomorrow night....got a creation I just pulled out of the oven that I'm starting to get reelllllll hungry for right now with tiles....I'll keep you all posted...see if it's worth mentioning.

    I made this again for the wife with seabass last night.....I can't tell you how good this one turns out......added a extra pepper for a little more zip, could easily add three if you like it hot.....
