Red Snapper Recipes?
I have a client of mine that knows that I am an avid fisherman and he is the farthest thing from but, he is a great cook and has been struggling to find a recipe for red snapper. If anyone has any good red snapper recipes I would love to give them to him. Thanks in advance!

i like my fish with a kick..and then the citrus flavor keeps it clean...ive used this recipe a couple of times...always worked out well....ENJOY!
2 pounds red Snapper Fillets
4 Cloves Garlic, minced
1/4 cup Orange Juice
2 tablespoons Grapefruit Juice, fresh squeezed
2 tablespoons Olive Oil
2 tablespoons Soy Sauce
1 tablespoon Lemon Juice, fresh squeezed
1/2 teaspoon Hot Pepper Sauce - or to taste
Black Pepper, freshly ground - to taste
Salt - to taste
Fresh Parsley, chopped if you like that...on top.
Directions:
Combine all ingredients except fish and parsley to make marinade; allow red Snapper Fillets to marinate in sauce (30-60 minutes) in refrigerator. (the citrus will lightly cook it)
Remove fish from marinade and place on a lightly oiled barbecue grill and cook (10 minutes, per inch of thickness of fish), or until the flesh is opaque, brushing frequently with Spicy Citrus Sauce. Serve hot, right from the barbecue.
i copied and pasted it...its most like the recipe however i always take it off the grill alittle early..fish still cooks when its hot..and you dont want it to get dried out.
