Looked a recipe on the net that was simply by mixing flour, baking powder, 1 egg and diced clams, I added some old bay as well as a splash of light beer. Second step, took a non stick pan with olive oil and butter 1/4 in deep and put a large spoonful in. Cooked those babys up like pancakes til brown on the outside, remove to cool and lightly salt. DAM they were good. Simple to make and taste great.

    1) git yourself some nice fresh XL shrimp...clean and butterfly
    2) you're gonna fry em so get your batter ready (egg, flour and coconut)
    3) into the flour, into the egg, and cover in cocunut flakes and let em take a dip in the medium oil you have hot and ready to do
    4) fry em up on medium, you dont want to burn em or overcook
    5) while you are doing this - take a bowl, dump a nice heaping of orange marmalade jelly into a bowl, now take a tablespoon of horseradish or two depending on hot you want it...mix together thoroughly and chill it
    6) let the rimps drip the extra oil off them then start shoveling with the sauce

    easy and tasty !

The sauce....simple tartar or coctail....I prefer a little tartar.

Cut the blackfish fillets in 2"x2" pieces...used finely crushed frosted flakes instead of bread crumbs....don't laugh until you try it.

Fry up, let cool off on some paper towels and dig in.

Boil up some water and add a handfull of sugar. Let the sugar 'melt' bring to a boil.

Add in the striper chunks until they turn white and float. only takes a minute or two. Take out and dip in melted butter. Taste just like lobster...almost.
