Found a nice pork loin roast on sale, This is a simple recipe. One of the keys is to season well and brown the roast to seal in the roast to keep it moist. I found a new seasoning called a greek blend as with all blends you need to watch the salt some of them have a lot of salt in them. This one doesnt seem to bad and its got good flavor.
Once the Roast is seared I added Carrots, Celery, Onions and Potatoes and let roast at 15 mins per lb at 350 degrees
For a nice crunch i added Bok Choy to this recipe it has a mild flavor but has nice crunch, I added the Bok Choy just before the Potatoes where done.
Pull from the oven allow to rest for a few minutes slice and serve a 1 pan meal.
