Porbeagle Shark ideas?

Hey guys,
A friend nailed a 300lb Porbeagle yesterday, and I was fortunate enough to get a couple of Fat Steaks.

Any ideas on preparation? Thanks in advance.

This is a recipe for grilled bluefish but I find it works well for any steaked fish/shark on the grill. Combine 1 cup sour cream, 1/3 cup mayonnaise, 2 tsp. horseradish, 1 tbs. lemon juice, 1 tbs. dill weed, dash of salt and pepper. Coat both sides of fish/shark w/ mixture of ingredients. Cover fish w/ sliced onions. Wrap tightly in heavy duty tin foil. Grill for about six or eight minutes on each side. Serve and enjoy. You can also save some of the ingredients and serve chilled. Let me know how it turns out. Most of my sharks are T/R, and I've only kept one porbeagle for the table out of curiosity. I found the meat, while very tasty, a bit soft. (shark was very well cared for. iced down quickly, etc.)Not sure how to change that...

While I haven't had porbeagle, with mako I usually marinate it in "Wasabiaki" from soy vey- it's a soy sauce based marinade with some wasabi in it. It definitely kicks it up a notch.

Thanks for the suggestions. I ended up taking one steak and just going with salt, pepper, lemon, and then coating it with softened butter and minced garlic. Thbe other I coated with. Wasabi Mayonnaise dressing (Kraft out of the jar). The butter and garlic wa s great! The wasabi mayo mostly cooked off w/o leaving much flavor, so good but not great.

Fish wasn't as firm as Mako, but still worked well for me. Good stuff.

What the Admiral does

Jay you hit it real close

Some olive oil and lemon bit of salt and pepper easy with the garlic so not to overpower the beast

Get the grill hot wicked hot and sear it on each side until it's still a bit aldente..

DO NOT OVER COOK IT

You can have it with some sweet corn boiled in seawater or other starch of your chice and if desired some soy wsabi mix on the side again not to over power
