Parmesan crusted grouper

Dredge grouper pieces in beaten egg, then in panko,store bought grated Parmesan, s&p, and a little garlic powder.

Pan fry.....or "sauté" if you're on a diet....in veg oil on each side until golden brown. Add a lid and turn it down if your fish is only burning and not cooking through.

You can also sear the fish and then put it in a oven set to 350ish. Thicker fillets need the oven.

Use a non-stick pan or you'll lose the crust to the pan!!!

Take a sauce pan.....add two lemons without the skin or pith, cut in half, a bunch of green onions, and a few tbs. of Worcestershire . Sweat the onions and lemons and mash the lemons. Once boiling well and nice and juicy add about 1/2-3/4 C of heavy cream.....WHISK.....wait a min or so and add 2 sticks of butter...cut up.... and whisk while the butter melts. DON'T BURN IT.

Drizzle over fish and add parsley and lemon wedges......SERVE.
