    Panko Breaded Yellow Perch

    I brought a few Yellow Perch home from yesterday's trip and kept this bunch out of the hot oil.

    Upper Chesapeake Perchin'

    I used a new skinning technique I found on Youtube, and while it took a lot longer than the video stated, it was a great way to get skin and gut the fish and ready them for the table.



    After skinning I rinsed them, dried them, and was ready to get cooking.



    I preheated the oven at 350 and prepared a mix of:

    Panko Bread Crumbs
    finely grated Parmesan cheese
    Parsley
    Oregano
    Garlic powder

    beat 4 eggs in another bowl.



    Prepare a sheet pan w/ a wire rack on it and spray the rack with cooking spray.

    Dredge the fish in the egg, then the bread crumb mixture, then place on the wire rack.



    drizzle a little olive oil, or melted butter on the fish, and place in the oven for 25-35 min.

    Add some sides of your choice and enjoy.

    Watch out for the bones, Yellow perch are great on the table, but the little suckers have quite a few bones.

    Panko crumbs are where it's at!
    Try fresh Brussels sprouts cut in half, fried, sprinkles with salt, pepper to taste and a touch of Parmesan cheese. Whoa....tasty!
