Pan grilled yellowfin tuna with sweet and spicy onions
Fresh yellow fin tuna from our very successful trip on the Thats Right
Sweet onions
3 onions
2 cloves garlic
1 tbsp fresh chopped ginger
2 limes
1/3 cup rice wine vinegar
1/3 cup sugar
Asian sriracha red chili sauce to taste I used about 2 tbsp and it had nice kick but good for my kids
Heat 2 tbsp of olive oil very hot add onions allow to carmelize add garlic and ginger stirring add sugar lime juice and vinegar.
Allow this to cook down on medium heat stirring occasionally unrolled liquid has a thick syrupy consistency
Take off the heat and add chilling sauce.
Use as a topping for grilled tuna.
