    Pan Grilled Venison Steaks

    Simple venison steak recipe

    5 loin steaks fat left on preferably
    2tbsps of monteral steak seasoning ( yes I could make my own but they make a pretty darn good blend)
    coat the steaks well allow to sit at room temp amd let the spices sink in.

    4 large shallots
    3/4 stick of butter softened
    pinch cayenne pepper

    I'd pay for it though and be forced to pay her in Kraft Macaroni and cheese

    Heat 2 tbsps of olive oil in a cast iron skillet

    let it get very hot
    add sliced shallots
    Stir on a consistent basis so the do not burn
    You want them to brown all the way, untill they become almost pasty.

    turn off the heat allow to cool slightly fold into softened butter add a pinch of cayenne pepper, Put in refrigerator to harden once again

    Calphalon makes a very good stove top double burner grill pan.

    Heat the grill pan till it smokes from the heat.

    I make sure that the steaks if they have fat on them that I put them fat side down first and let the fat render.

    Once the fat has cooked down I grill them as normal

    Cook till medium rare. I do medium for my girls.

    Plate and while hot top with a dollop of roasted shallot butter and allow it to melt into the meat

    Serve with Broccoli and Mac and cheese
    I head of broccoli
    1 tbsp dried lemon peel
    salt
    water
    7 min in microwave

    Venison

    Its what for dinner...that looks really good. The butter looks really good.

    Wow! I have never seen that much fat on deer meat before. Our NC deer must be on a diet! Great pictures, I think I'll lay some out for supper tomorrow night................

    Krazy, Those are corn fed Jersey deer. They came from the middle of the state. The southern NJ deer are scrub pine and try and find whatever they can, and don't have fat like that. They are lean. Normally we see Maryland deer like that, there diet is all corn and acorns. They get some nice fat deer from the eastern shore area.

    Bird Dog, That butter is so simple, but it goes with every thing. Shoot you can spread it on a Bagel if you want.

    But they are still wild right? Are are they farm raised? It's still funny/cool to see that much fat on a deer

    Not Farm raised, Wild deer. Actually all the ones we've seen this year have had good fat, I think the snow from last year has them packing on the calories for this year. Just my opinion not anything proven. As normally we see some with fat like that this year a lot of them are like that. Tim
