    New striper recipe

    A customer of mine felt pity on me and gave me a striper the other day (since I don't get to fish any more). so I perused the kitchen to see what was on hand and I came up with this new recipe. It came out very nice.

    2lbs of striper left in one chunk on a bigger fish or a side of a smaller one.
    lemon pepper seasoning
    2 ripe but not overly ripe pears skin on sliced thinly
    1/2 to 3/4 cup of brown sugar
    1/2 cup of sherry
    a few dashes of lemon juice


    Sprinkle fillet with lemon pepper, lay in a backing dish. arrange sliced pear over the top covering fillet with pear slices. Pour lemon juice and sherry over the pears. Pour brown sugar over the top of pears. Bake in 350 oven for 20 mins give or take depending on size and thickness of fillet.
    When the fish is done, remove to a serving plate, empty juice from pan into a small sauce pan and reduce liquid on low heat if the sauce is to thin (should have consistancy of pancake syrup) you can add more brown sugar or thicken with corn starch. drizzle with sauce and serve with a rice dish.     Cap't Tate's kitchen....

    If you cook it Tim, it's gotta be amazing. I have yet to try something of yours that didn't make my mouth water and my hair curl, and I can't wait to try this!

    Part of me is sad Cap't Tate's is so far away from OTH, but the other half knows it's better because I'd be there for meals ALL THE TIME if you were closer!

    Can't wait to try the recipe, thanks for posting it!!! Any other secret recipes you might want to disclose? I'll swap you for a killer pumpkin roll recipe, or my awesome banana bread. Not that you should keep bananas around the bait, but you know, for the unsuperstitious in the crowd

    Hey Kelly Glad you have enjoyed the food. What recipes would you like? I guess this time of year it should be stripers, taug, seabass and the such. I'll get working on it.
    I've never been much of a baker, to exact for me. Post up the pumpkin rolls recipe please.
    Did you say the B word. I'm glad the computer is at home right now. I'd have to throw out all the fresh bait, cause it would be tainted with essence of bannana.LOL. Thanks again Tim
