Dolphin is possibly the most versitile fish available for table--- it can be fried, grilled, broiled, baked, steamed, or most anything else--- kinda what I'm in the mood for at the time and what is available in the frig and pantry dictates how I cook it.
Based on a report here on SFC, I made some Mahi piccatta the other night that was real good. Good ole grilled with a half hour marinade in italian dressing is hard to beat, as is broiled with white wine and basil, covered in mango salsa when it comes out of the oven.
Then there is the all-time southern favorite of Mahi fingers deep fried with cocktail (or your favorite) dipping sauce.

take a fillet put it in tinfoil cover it in salsa add some butter and other seasonings of your choice (garlic, salantro, chili's) squeeze some lime wrap it up and throw it on the grill.... or make fish and chips.
