    Need a Rockfish recipe

    Im trying to go low fat here boys... I also do not have a grill in my apt so im stuck with the skillet. Im trying to make dinner for a beautiful young woman from thailand, and she hasnt ever had it before... So any help will be MUCH appreciated. I'll post pictures if it goes well.. Of her ha ha

    Butter, garlic, salt and pepper in a pan. Very easy.

    If you got a oven in that Apartment. Set it on 375 get a couple of Rockfish Fillets.

    Sea Salt
    Pepper
    1 Lemon
    1 onion

    Cover bottom of baking dish with foil. Grease foil down with Butter,P.A.M ect.
    Place fillets in the foil . Salt and pepper. Lay slices of onion on top of fish. Slice the lemon in half put slices on fish take the other half and squeeze all the juice onto fish . cover top with foil place a few holes in it. Put in oven for 30 minutes or until fish flakes.

    My old standby for Rockfish is:

    2-4 Tsp butter/marg
    2-4 Tsp lemon juice
    1 teaspoon lemon pepper spice
    1-2 teaspoon Old Bay
    Dill Weed
    Rockfish Fillets

    Melt butter
    add lemon juice, lemon pepper and Old Bay
    Mix
    pour over fillets in ziplock bag
    let sit for 30 minutes
    preheat oven to 425
    take a large piece of heavy duty foil and put fillets on part of it
    Try to keep the lemon/butter mix to a minimum
    sprinkle a little Old Bay and Dill Weed on fillets
    fold foil to make a SEALED bag with fillets inside - the bag will allow the fillets to lie flat
    cook for 20-30 minutes depending on how thick the fillets are - do NOT flip the bag
    Open bag when done - be careful opening bag - the steam will be hot when you first cut the bag!
    Enjoy with a nice Chardoney

    This may not be the most low fat way to prepare but it is good. I normally do this on the grill but lower the cooking time by 10 minutes. I have done it in the oven on occasion and it has turned out pretty much just as well.
