Need a MOIST Cornbread Recipe

Putting the menu together for a pig roast and I need a GOOD MOIST cornbread Recipe. I know you southern boys got some good recipes, cough them up!

D ... would "spoon" cornbread work?? Super moist, just can't eat it like bread ... needs utensils

load it up with butter flavored Crisco. The best cake shops in the north use Crisco in their icing and cakes. Off set this with more sugar if sweetness is desired

1 box Jiffy cornbread mix
1 can of cream corn
1/2 cup oil
8oz sour cream
3 eggs
mix all together pour in greased pyrex

bake 375 45-60 min

This is the one I always use. I have others but this is the one my clan goes crazy for. Hope it helps.

You will need:
2 cups Bisquick
1 cup Buttermilk
1 cup melted Butter
1/2 teaspoon baking soda
1 cup Cornmeal
1/2 cup Sugar
8 oz Creamed Corn
2 Eggs
Preheat oven to 350F
1. Combine bisquick, baking soda, cornmeal, sugar.
2. Add buttermilk, creamed corn, eggs and melted butter.
3. Mix well.
4. Pour evenly into a well greased 9" x 13" pyrex (glass baking) dish
5. Bake 30 to 40 minutes - until toothpick comes out clean.

I never cared for "cake" style cornbread because it tends to be dry. Plus, down here in NC we fry our cornbread in a skillet like patties. However - a great way to moisten your cornbread - with any recipe is to add a can of creamed corn right in the mix - as Justin would say "Whoooo boy, that be wondermus!"
