Cooked a nice meal for my girl last night. Havent had salmon in a while, so I thought Id give it a try.
Here is the marinade I used:
2 cups of lowfat regular yogurt
2 tablespoons of good olive oil
1 skinless whole cucumber grated finely (cheese grater works good)
Garlic, use a good amount, it gets diluted with the rest of the ingredients
Fresh Lemon Juice
Kosher salt and Pepper
MIX IT ALL UP
Take a big filet and cut it in half and place in a baking dish. Put some Pam on the dish so it doesnt stick. Also, SKIN your filets. Take the marinade and put it all over the filets very generously. Cover in foil and let it sit for a 1/2 hr.
Next, place the dish in a pre heated oven at 400. Let cook for 10mins and then give it a look and go from there until done.
Its a good one and its easy.
Hopefully if you do it right you will get some pie for dessert like I did.
