Continuing with a recipe from a fish you don't hear much about. More considered for bait than table, although there are some really big festivals in Fl in its honor. Also they have been harvested for it's roe for the over seas market.
In tough economic times protein is protein.
Recipe:
1 dz Finger mullet
1 onion
2 cloves of garlic
1/2 bunch of green onions
3-4 slices of thick cut smoked bacon
Salt and Pepper to taste
Cup Corn Starch
2tbsps of butter if needed
Fillet or scale and split your mullet
Dice small your onions, garlic and Bacon
Render your bacon and make it crispy
Remove the bacon
Dust fillets in corn starch
add fillets to pan with bacon grease Brown
Remove
Add onions and garlic to pan add butter if needed
finish with green onions and add bacon back in add fillets to warm.

I'd eat Mullet again really was enjoyable. I preferred them to weakfish as I feel weakfish is mushy. Filleted there is no bone issue, the finger mullet are a bit time consuming to make a meal but I feel was well worth it. I'm sure the bigger ones and corn cobs would make a nice meal.
