    Miso Glazed Wahoo

    Took a few Wahoo steaks to a local restaurant and had them prepare them for me. They made them with a Miso glaze, which I guess is really "fermented soybean paste". Had a sort of Teriyaki crust flavor to it. They were marinated for 30 min, browned a few minutes on all sides on the grill, then carmelized in a broiler, served over wild mushroom risotto.

    I will get the link to the Miso glaze asap, it was really easy and came out great. Different spin on an old favorite.

    Finally got the recipe for the Miso glaze for Wahoo/Tuna from a good friend who owns a great restaurant in NYC. See the top post for the use of the glaze.


    1 cup blonde miso

    1 cup mirin

    ½ cup syrup

    2T sesame oil

    1 cup canola oil



    Blend, and use

    Enjoy
