    Mahi Mahi Ceviche

    Finally had a chance to fish this past friday, maybe not the best day. But the forecast had predicted better than what we got.

    Fished with my buddy Steve and his two boys Reid and Evan. Short of it is we caught 3 false albacore and 2 Mahi 7-10lbs and the boys had fun so that what really mattered.

    One Mahi ended up as Ceviche and photo and recipe to follow. More on the other one at a later time.

    Ingredients
    Approximatly 2lbs of trimmed mahi fillets all blood line removed(fresh mahi only) diced into small chunks

    2 cerrano chili's (this makes it mild) add more or more potent chilis for your taste

    6-8 limes you nee 1.25 to 1.5 cups fresh squeezed lime juice

    Rice Wine Vinegar the best you can find (enough when added to lime juice makes 2 cups of Liquid)

    1 Red Pepper diced

    1 Red Onion diced

    2tbsp fresh chopped cilantro

    1/2 cup green onions

    1.5 to 2 tsp salt I used close to 2

    Black pepper to taste

    1tsp sugar

    Trim than dice Mahi

    Combine all ingredients make sure all fish is covered with liquid. Refrigerate for two hours prior to serving. Serve with crackers, grilled baguettes or tortilla chips. Can be i refrigerate for up to 24hrs

    that bowl of fish looks amazing! Definitely craving some pickled dolphin after seeing that!
