LONGFIN - Perfect topping - BUTTER

This isn't so much a recipe but I always shy away from the longfin fillets when cutting them up and usually bag them up to give away to friends. I keep the YFT. I have never really liked LFT as steaks and used the long fin for tuna salad samiches.

Well I change my tune. After marinated in whatever you want or just plain....try a slab of butter over top of that tuna steak fresh off the grill so it melts all over the piece....I know butter on top of anything taste good. Well butter on top of LFT taste great !

I agree. The mild flavor of the longfin brings a smile to the dinner table. The yellowfin need a kick of heat or spice. I like yellowfin. But the longfin seams to store better for me and not grow the stronger taste over the winter.
Just Butter? Man that sounds great. We blend butter with fresh basil or dill. Not much though. Maybe a few pinches to a stick. A drizzle of evo to smooth it all together if the butter is hard.

i chop up parsley, rosemary, thyme, garlic and shallots....mix that with UNsalted butter, roll into a log using plastic wrap....pop in the freezer for a lil bit...and slice. excellent for steaks, too.

I'll try that next time - thx...my neighbors and friends will no longer be getting all the LFT. One less thing on the menu for them.

the "KIDD" gave me a piece of yellowfin from your trip, thanks.even kitty loved it. next summer bring the rug rats over to the house for lunch and swim. how many are there by the way?i want to be sure im not overrun!
