Roasted Okra

Here's one I like.

ROASTED OKRA

1 lb. of okra
1 small red onion
4 cloves of garlic, thinly sliced
4 tablespoons olive oil
mint sprigs

Preheat oven to 375 degrees. Rinse okra under cold water and drain. Trim the stems off but don’t remove the caps. Slice up onion. Place okra, onion and garlic on oiled cookie pan and drizzle with olive oil. Tuck in mint sprigs. Add salt and pepper and toss together. Let flavors mingle for 20 minutes. Roast for 5 to 10 minutes.

You can cut them up like the size to fry and stew them with a can of tomatoes, eat like that or over rice. I like them all kinds of ways but this is a good one. Later, Cooter

Cooter, I forgot about stewing them with tomatoes and pouring over rice--- haven't had it that way in many a year--- will do.
