Left over Meatloaf

I love it my wife can't eat it.

I always have left over. Here is what I did

Dice up the meatloaf into 1/2 " cubes
place cubes inside tostitos scoops corn chips
Cover with mexican blend cheese
micro for 45 seconds
cover with salsa

Here's what I do:

Place meatloaf into pan on stove and heat up..chop into small pieces, add onions/peppers if desired

Cut an Italian Roll open

Place favorite spaghetti sauce IN pan with meatloaf to warm up.

Put in Italian Roll....sprinkle with Mozzarella Cheese, add Italian Seasoning and Toast until cheese is melted

Makes an awesome Mealoaf Parm! When done, repeat.

I like it cold right out of the fridge with a splash of hot sauce. MMMMMMmmmmm goood! Although that tostitos idea sounds pretty damn tasty to.
