Lazy Day Ceviche experimenting

Well its cold and Rainy here in Tyaskin and the grocery store is 18 miles away. Its just me and my father-in-law while Jen and Nico are in Kentucky watching the Rolex 3-day event. Dad-in-law loves ceviche so I thought I woulde experiment with tog and whatever I had in the fridge. I think I found a new favorite Ceviche.

6 - tog fillets cubed really small.
1 - tomato cubed really small
1/2 - Sweet Vidalia Onion cubed really small
2 cloves of garlic sliced thin with a razor blade like they did in Goodfellas
mix it all together add
3 - Lemon - cut in half and spoon squeeze onto the mix
1 - orange -cut in half and spoon sqeeze onto the mix
sprinkle some cilantro - I prefer fresh but all I had was the McCormick stuff
Squeeze about 1/2 inch of Wasbi paste add salt and papper to taste.
take some of your lemon and orange peel and zest it over the mix - Not too much. Mix it all real good.

cover and let stand for an hour or so. We could only stand it for about 5 minutes before we dug in We are now making our second batch - We'll let this one stand for an hour and report. But the first batch was awesome.

sounds good
i like the ceviche

while you are waiting

cut tog filetts in cubes,big 2'X2" or big strips
boil water
drop in brown sugar 3/4 cup
stir
drop in tog cubes
wait till almost boil,

remove tog

serve with melted butter

report back

Glenn - it was awesome - we just finished a bowl that should have feed 6 and that was our second bowl. We had one for lunch. Once in settle in the fridge for an couple of hours it really got good but the wasbi flavor diminished so we had to add a little more.

Bill i love that toggin
next to jigging rods, togging rods are my favorite to make. got a few "special" tog sticks
and love that tog fishing

i usually end up with a bunch of filets and this is a sure way of using them up
everyone loves it
