king salad
cut all the red meat off the king(discard), put the rest it in a pot with a little water(not enough to cover the fish),stir a time or two, bring it to a boil. by the time it starts to boil it should be done strain it and chop it up . let it cool a little, add chopped onion, add mayo and miracle whip mix half and half (not enough to make it creamy but a little more pasty), sweet relish ,salt and pepper and old bay seasoning to taste, stir it all together and let set in fridge over night and stir a few times if you remember to, serve with crackers or on a sandwhich, only way ill eat king anymore, hope you try it cause you will like it

Growin' up my dad always steaked them, and it was so-so. A few years ago at a KMT a guy told me about cutting the medallions away from the bloodline and the skin. Pan fry it with some cayene, deep fry it, etc. What ever way you eat King Mack, it taste so much better when you get the white meat away from everything else.

Tater, you're right, there's a lot of great fish in the sea better than KM but that is the predominant game fish in this area so when we don't score the other, KM is better than a no fish. Really though, it's really decent when you cook just the white meat.

P.S. Tater - Talking about tuna and wahoo, don't forget Cobia! Of all the fish out there it's the best to me.
