Steak king mackeral into 2" steaks. Cut medalions from the steaks leaving red meat and skin. Marinade chunks in italian dressing. Slice strips of bacon in half. Wrap each piece with half strip of bacon and secure with toothpic. Place on lightly greased cookie sheet. Preheat oven to 400, cook 5 min turn another 5 min. Turn oven to broil and crisp bacon, just watch closely as all ovens take different times.

yea almost all of them are good eats but i was talking about makeing the salad out of yellowfin and wahoo, king is very good in the salad and its the only way ive found i like it, i havent tried cobia in the salad yet but i will this summer i hope. when you eat the salad with some crackers and a cold beer its all good, may even throw in some of those jalapinos finely chopped if you dare

King Mack Trick
I soak all super fishy fish in Whole Milk for a few hours. I change the milk a few times. I also always cut the dark and bloody meat away. The white meat grills up reallly nice when covered in mayo and Italian Dressing.

Ceviche
This is awesome for King Mackerel.
Take a fillet or two depending on how many to serve and cube it in 1/2 in to 1 in. cubes. Remove all red meat! Salt it down with kosher salt or sea salt to help flavor. Mix Equal parts lemon/ lime juice enough to submerge all the ingredients. Add a finely cut chili pepper and mix into the juice mixture. Let it sit. Chop some tomatoes and some red/ yellow peppers set aside Chop up a vidalia or red onion. put it in some hot water to soften the onion. Set aside Chop up a good amount of fresh cilantro. Set aside Rinse the salt off the fish and add to the juice mixture Then add everything together. The citrus in the juice will cook the fish in about 20 minutes. I like to let it stand a bit longer. Salt and pepper to taste. Then garnish with more cilantro. Add some scallops and or some shrimp to make it even more appealing! Delicious !
