Smile Killer Smoked Rockfish

This recipe was given to me by a bud over 20 years ago, I made a couple of changes and let me say it ROCKS!!!

Smoked Fish Fillets
Recipe By : Lucian

1/3 cup soy sauce -- Kikoman's
2/3 cup teriyaki sauce -- Kikoman's
1 pinch garlic powder
1 pinch onion powder
2 1/2 tsp brown sugar
large fish fillets
1/2 cup mesquite or hickory wood chips for smoking soaked in water


Mix all but wood chips together well.

Add Fish Fillets (Rockfish is awesome).

Marinate 2 hours to overnight (best).

Add wood chips to a charcoal smoker.

Place Fillets on rack and smoke for about 1 hour tops until meat flakes (Don't overcook).

Can be served as is or with cream cheese and crackers.

Excellent hot or cold.

Actually, I have NONE... I gave it all to my crew, family and friends... Gonna go catch some this weekend and smoke it up for new years...

Tip: The Larger the Striper Filets, The Better it TASTES!!! I also skin my fillets and trim off any bones as well as most of the red meat..

Thumbs up smoked bass

You are right on with the smoked bass. I like the flavor way better than most smoked fish I ever eaten. I still like the bass on the grill with Italian dressing and the best way for me is as poor man's lobster ( steamed after soaking in milk for several minutes or longer and then dipped in garlic butter ). Also try cutting the bass in small cubes and soaking them over nite in 100% lime juice and then dipping them in cocktail sauce.
Thats it! I got to eat now I'm hungry.
