    Jalapeno poppers Joes way

    Start with the biggest Jalapenos's you can get. Fat ones are good. Leave whole.
    Cut a slice length wise down one side.
    Cut a slice across the top forming a "T" cut.
    Scoop out seeds and insides and retain.
    (a small spoon or cocktail knife works).
    Soak some toothpicks in water.
    Caution handling the insides and seeds, that stuff can be
    hotter than you think.

    Mix together,
    Shredded Sharp Cheddar cheese
    Smoked Bluefish
    Add reserved seeds and insides to mix
    (the more seeds you add the hotter they will
    turn out), You may be surprised how hot a
    jalapeno can be.
    Wrap in Bacon and hold together with toothpick.

    Set up grill with 1/2 heated on high.
    Cook peppers over unheated half till peppers look about done.
    The bacon will partially cook.
    Move to heated side and cook, turning till bacon is crisp.
    This will not take long, The bacon fat will drip and flare ups will cause the bacon to crisp fast.

    It's a little bit of work but if you like poppers try this.
    I've tried other stuffing like shrimp and crab but they get lost in the pepper and bacon flavor. Smoked bluefish work good.

    I have smoked em myself, Low Heat smoking.
    Usually I just buy it. A lot faster.

    Honestly, beware the heat in those seeds.
    Served these at a poker game with some hot pepper eating buddies.
    I mixed in all the seads from the peppers i used.
    They were smokin.
    Next time I cut it in half, still hot but manageable.

    They are hootin and hollering in the kitchen right now. Damn - they were phenominal. I used sautead Tuna with Cajun spice but I think adding all the seeds back into the mix was a bit much. My nostrils are on fire, I can't really see anymore and I have a feeling I will be doing a handstand in the shower this evening but they were still pretty damn good!!!!!!!! thanks

    You were warned. Always heard jalapenos can be hot but never had a really hot one till I put the "guts" back in. Glad you enjoyed.
    It' not the shower thats gonna get ya.
    Cut back on what you put back in till you get em where you want em.
    Ps: lots of beer helps put out the fire. Well, maybe not, but after a while you dont notice anymore.
