    insane crab balls

    ok guys and gals here it is and im not kidding when i say its the best. this recipe cost me a pound of flesh and my wife would kill me if she knew that i gave it out, so if u know me dont let the cat outta the bag!

    insane crab balls -

    a pound of lump/backfin - no canned crap!
    1/4 cup bread crumbs
    1 egg
    1tsp dry mustard
    1/4 tsp red pepper
    a little lemon juice fresh
    4 tbs mayo

    mix all above and roll into balls (a tad larger than golf)

    beat a few eggs in a bowl
    crush some regular lays potato chips
    roll the balls in beaten eggs and then in the smashed chips
    refrigerate a few hours
    break out the deep fryer (must be entirely submerged) and heat up peanut oil and fry til lightly browned (too dark will dry em out)

    remoulade for dipping


    1 cup mayo
    3 tbs ketchup
    2 tsp worcestershire
    1 tsp tabasco
    4 tbs horsereadish
    1 finely chopped onion
    lemon juice (fresh)

    mix it all up

    most amounts are approximate - i just eyeball it. this stuff is insanely good. i expect some good recipes in return!

    i am going to have to cook these up this weekend.. wife is not a fish lover but loooooooves crab meat!! will get some super lump and get it done!!

    be sure to make the remoulade too - it is delish. hope u enjoy. think ill have to make some for football on sunday.

    I steamed some Rockfish and flaked it apart and refrigerated it. I then replaced the backfin in your recipe with that. Not bad at all. Can't wait to try it with crabs. I addded a little Garlic to the remoulade. I bet the same would be good with that goober meat you got. Thanks for the recipe.

    pretty good idea - rockfish and crab have a very similar consistency. will have to try the grouper meat or perhaps some golden tile

    had these last night for dinner, very good
    and I didn't even make the remoulade
    used the canned crap and the recipe is awsome
    only deep fry for 2 mins
